Toffee Apple Self-Saucing Pudding

“So saucy and warming on a Winter’s night.” The brilliant Two Raw Sisters have created this delicious and super simple dessert for us using their orange Biroix Dutch Oven. A one-pot wonder, this pud ticks all the right boxes for winter. Get your ice cream ready, this dessert is going to be the highlight of your dinner!

What you need – Cake:

  • 1 cup of flour of your choice
  • 1/2 cup of coconut sugar 
  • 1/3 cup of coconut oil, melted 
  • 1/2 cup of plant-based or dairy milk 
  • 1 1/2 tsp of baking soda
  • 1 large apple (or pear), cut into medium sized chunks
  • Pinch of sea salt 

What you need – Toffee Sauce:

  • 1/2 cup of water
  • 1/2 cup of coconut sugar
  • 1/4 cup of coconut yoghurt
  • 1 1/2 tsp of arrowroot or corn starch
  • 1 tsp of sea salt

How to make:

  • Pre-heat the oven to 190°C.
  • Add all of the cake ingredients to a bowl – excluding the apple – and mix until well combined.
  • Add apple chunks and mix until evenly distributed throughout the cake batter.
  • Pour the cake batter into your Biroix Dutch Oven and smooth the top.
  • Set aside.
  • To make the Toffee Sauce: In a small pot add the water, coconut sugar, coconut yoghurt, corn starch and salt.
  • Heat over a medium heat until it boils.
  • Once boiling, take off the heat and stir for 20-40 seconds until you have a thick but still pourable dark caramel.
  • Slowly pour the sauce over the back of a large metal spoon to cover the pudding.
  • Place your Biroix Dutch Oven in the oven and cook for 35 minutes.
  • Serve hot with vanilla ice cream or yoghurt.
  • Any leftovers will keep in the fridge in an airtight container for up to 4 days.
